Preheat oven and roasting pan to 450°.
Spice your filet.
After preheated, grease pan with thin layer of butter
Place filet in pan, it should sizzle right away, and return to oven.
Roast meat for 10 minutes at 450°, then turn down to 350° for 20 - 30 minutes.
P.S. If you wrapped your filet in bacon, add an extra 10 minutes at 350°
For best results - ALWAYS check the internal temperature to assure you reach the desired doneness of your roast.
Internal temperatures should be:
120-125°F for Rare
128°F for Medium Rare
130-135°F for Medium
